​Transcend Coffee Roasters are pioneers of the Coffee scene in Edmonton, building a reputation on three transcendent values: Quality, relationships, and community. 

​The Transcend story begins with a young ambitious lawyer who gave up his law practice to become a coffee entrepreneur. Poul Mark dreamed of operating his own business and his affinity for coffee drew him into roasting. He started by opening the roastery in 2006 in an industrial bay in Edmonton, Alberta and while he received some training from J.J. Bean out of Vancouver, he actually learned the trade primarily through trial and error.

​Very quickly after he began roasting Poul felt like he had hit a ceiling. “I didn’t like the coffees I was buying, the quality wasn’t quite there,” says Poul, explaining that he decided to learn more about coffee sourcing and that was when he uncovered what he calls the ‘ugly side’ of the coffee industry. ​“I learned that the reality of the coffee industry is that it is a really dirty industry … it is an industry built on 
exploitation. But I was all in…” says Poul who found himself at a crossroads.

On the one hand he was disillusioned by the social justice issues in the coffee industry, but on the other hand he had already invested everything he had into his business . It was only a few months later when Poul discovered the solution he needed to continue to pursue his dream. 
In 2007, the Specialty Coffee Association of America invited Poul to a competition where he would be part of a 22-person panel of judges that included coffee industry leaders such as Rick Reinhardt. Poul was introduced to the concept of seed-to-cup!

roaster builds a relationship with the coffee farmer. This relationship enables the roaster to ensure quality coffee and the farmer to ensure larger profits because there is no middleman in the picture. This was the answer Poul was looking for. It was a way to secure quality coffee while also helping to combat the exploitation in the industry.

Poul spent most of the next few years flying around the world to visit farms, build direct trade relationships and source rare and exciting coffees. He also had opportunities to judge competitions and in 2011 Poul was asked to be on a three-person panel addressing the topic of micro lots and direct trade at the Ramacafe conference in Nicaragua. Poul was 
one of the first Canadians to be qualified as a certified Q-graders—an international professional accreditation for evaluating both green and roasted coffee.

Transcend is a company that is built on the values of quality, community and long-term sustainable relationships. “We are not a profit focused company,” says Poul. “We make sure everyone we work with benefits from the farmers to the employees to our customers.”

Today the roaster has more than 50 employees who operate the roastery, wholesale program, online storefront and two café’s in Edmonton.

​Founded in 2013 by Kyle Chalupiak and Desmond Mulvey, Caliber Coffee Roasters has earned a reputation as Regina’s top roaster and they have long been setting the pace when it comes to the city’s growing coffee culture.

“I’ve been pulling shots for over 20 years,” says Desmond as he deftly oversees the latest roast of beans through the impressive Probat Model L-12 while also enjoying his morning espresso. It’s just a typical day at Caliber for the coffee guru who possesses a unique blend of coffee passion and business savyy. ​
“The customer always comes first at Caliber and that is why we only offer the best of the best in delicious, high quality roasts and a full range of coffee products and accessories,” says Desmond who is Caliber’s Head Roaster and Operations Manager.
Coffee became more than a personal passion for Desmond when he opened a coffee house in downtown Regina in 1997 and began to share his love for the bean by working day and night as a barista and small business operator.

Meanwhile Kyle and his father were gaining their own experience in Regina’s coffee market through their company, Ambassador Coffee. When Desmond and Kyle’s paths crossed their shared desire for premium roast coffee initiated a series of very fortunate events.

“We bought the roaster in 2012 and in 2013 we started roasting. Kyle told me to ‘go get some sales!’,” says Desmond, adding that almost immediately he began to appreciate that people in Regina were very interested in locally roasted coffee.

Roasting was new to both Kyle and Desmond so learning in the early days was characterized by trial and error, but as the business began to grow, an opportunity arose for an informal mentorship with a coffee roaster from Vancouver who helped Desmond to grow in his understanding of both the art and science of roasting.
Working with local cafes and coffee houses has always been a highlight for both Kyle and Desmond and continues to motivate the two coffee entrepreneurs to provide the best quality coffee roasts; something they have long known begins with the bean.
Caliber sources their coffee from various places around the world including Rwanda, Bali, Tanzania, Ethiopia, Brazil, Colombia, Hawaii, and even Yemen…
 
Second to the bean is the quality of the roast and cupping, blending, pre-blending, tasting and perfecting is part of the regular routine at Caliber and an integral part of their unwavering commitment to the highest customer service. 

​A third priority is education. “We can roast light or dark and our goal is always to try to expand the tastes of our customers to help them appreciate the differences in coffee,” says Desmond, explaining that for many people coffee is often seen in the same light as fast food. “Our goal is to help people appreciate that coffee should never be an after thought but rather it can be the very best part of the day.”

Rosso Coffee Roasters Lead the Paradigm Shift in Calgary’s Coffee Culture 

Behind the success of Calgary’s popular and successful Rosso Coffee Roasters lies an appreciation for the connection between specialty coffee and a special community. Recently Paradigm Coffee co-founder Aaron Hoimyr had the privilege of speaking with Brett Tromburg, Rosso’s Wholesale Account Manager, about Rosso’s history and the growing specialty coffee culture in Canada.

Brett’s journey with Rosso began a couple of years ago when he joined the company as the Assistant Manager of the Rosso Café in Inglewood, located in southeast Calgary. He immediately was welcomed into a close-knit team united by a mutual passion for coffee and community. “It’s a company of great people who genuinely care about coffee, community and each other,” says Brett who has more 
recently moved to a new position within Rosso where he is working to bring a sense of focus, leadership and support to the company’s growing wholesale program.
​Rosso’s roots date back to September of 2007 when company founder David Crosby opened his first café. The idea was to create a place people could gather and enjoy a truly great cup of coffee as well as opportunities to make meaningful community connections that would enrich their lives.

Over the course of the last 10 years, Rosso has grown from operating only one café to seven cafes across Calgary. The wholesale business has also expanded stretching across Canada and now Canadians as far east as Nova Scotia have had the opportunity to try out Rosso coffee. Today Rosso employs over 70 people and enjoys partnerships with coffee farmers in countries around the world including Costa Rica, Guatemala, Colombia, Rwanda, Myanmar, Burundi and Brazil.

Rosso was the first Canadian roaster to directly source coffee from Myanmar and recently made their first purchase in Burundi. “It is very rewarding to contribute to positive economic growth in these countries while also showcasing their very unique taste profiles,” says Brett.
​In addition to a great vision, the secret of Rosso’s success lies in an unwavering and enduring commitment to quality and roast consistency. “We work very hard to maintain consistency through quality control including tests and tasting at every step of the roasting process,” says Brett, who adds, “every roast is individually tested before it leaves the roastery.”
 
Rosso offers a light delicate roast profile with a range of delicious, exotic coffees. They have received numerous awards including 1st place at the 2018 National Barista Championship in Toronto and 5th place in the 2018 World Championships in Amsterdam. Earlier this year they received 3rd place in the Coffee Masters Competition in the United Kingdom.

33 1/3 Coffee Roasters

At the heart of Regina’s 13th avenue arts district in the walkable and welcoming Cathedral community lies the prolific 33 1/3 Coffee Roasters; our city’s very first third wave coffee roaster.

 This forward-thinking company began operations five years ago, long before there was even a third wave coffee scene in Regina. Ever since, 33 1/3 has been leading the way, pushing the boundaries of change and helping people warm up to a whole new coffee experience.

Owner Eric Galbraith profiles high quality coffee sourced from farms around the world including Brazil and Costa Rica. He is also exploring new partnerships in Mexico, Guatemala, and even Ethiopia.

 “I like dealing directly with the producers and knowing that our sales will benefit the farmers and their families in these countries,” says Eric whose grandfather has run a local floral shop which has served the Regina community for over 40 years.

Eric’s own business venture began as a hobby of roasting coffee on the barbecue in his backyard. It was not long, however, before he found himself filling orders for friends and family who had fallen in love with his delicious barbeque-roasted coffee. Then, one day out of the blue, a Regina-based roastery decided to shut its doors. Eric leapt at the opportunity to buy their Diedrich IR-24K coffee roaster and then he took a bold step into the coffee roasting business by launching 33 1/3 into the Regina market.
 
Now, just five years later, 33 1/3 has nine employees, two locations and an outstanding reputation for roasting high quality coffee. You will find 33 1/3 at the farmers’ market and also participating in pop-ups with other local entrepreneurs. As well, Eric is very committed to supporting Saskatchewan-based businesses and 
he is constantly opening his doors to other local entrepreneurs like Little Sparrow Ice Cream, The Everyday Kitchen, Hobo Donuts, and Malinche.
There is definitely a paradigm shift underway in coffee experiences and it is very exciting to see people getting on board with the third wave coffee concept in Regina. Coffee is anything but mundane or routine, it is a culinary experience which begins with sourcing the best beans, roasting locally and then making great coffee and sharing it with coffee lovers. Hats off to 33 1/3 for leading us into the third wave of coffee experience!
